Eleo Cedar Nut Flour is a natural dietary food product made from the cold-pressed seeds of the Siberian pine (Pinus sibirica), commonly known as Siberian cedar or cedar pine, which is native to the Altai and Siberian regions of Russia. Cedar nut flour is the residual meal produced after cold pressing of Siberian cedar nuts for their oil, and retains a high concentration of plant protein, dietary fibre and micro- and macronutrients. It is one of the richest plant sources of complete protein — typically 25–28% protein by weight — containing all essential amino acids including arginine, glutamine and tryptophan. The flour is naturally rich in pinolenic acid (a rare polyunsaturated omega-6 fatty acid found almost exclusively in pine seeds), linoleic acid, polyunsaturated fatty acids, vitamin E (tocopherols), zinc and magnesium. Siberian cedar nuts and their flour have been a traditional food of indigenous Siberian peoples for centuries and form an important part of the traditional Altai diet.
