Milk thistle (Silybum marianum, also known as marian thistle) is a biennial or annual plant of the Asteraceae family native to southern Europe, the Mediterranean and western Asia, now widely cultivated for its seeds. Milk thistle seeds are uniquely rich in a flavonoid complex called silymarin, which consists predominantly of silibinin (silybin), silydianin and silychristin. Silymarin is fat-soluble and concentrated in the seed. In addition to silymarin, milk thistle seed flour is a good source of dietary fibre, plant protein and unsaturated fatty acids including linoleic acid (omega-6). The flour has a characteristic slightly bitter, mild herby taste that complements cereals, smoothies and savoury dishes.
