Cedar Nut Press Cake is the residual meal produced by cold-pressing the kernels of the Siberian pine nut (Pinus sibirica), also commonly called "cedar nut" in Russian culinary tradition. During oil pressing, the kernels are compressed to extract the rich cedar nut oil; the resulting press cake retains the full complement of minerals and vitamins found in the original nut, as well as approximately 30% of the cedar nut oil content — making it a significantly more nutrient-dense product than the fully defatted press cakes typical of industrial oil production.
The press cake produced at temperatures maintained up to 300°C retains the structural integrity of the "flattened nut" pieces, preserving all the beneficial constituents of the source material. Cedar nut press cake is a source of protein with a complete essential amino acid profile, dietary fibre, magnesium, phosphorus, zinc, manganese, and the characteristic pinolenic acid (a rare omega-5 fatty acid) of pine nut oil. It can be consumed as a standalone snack, added to porridge, granola, yoghurt, smoothies, or incorporated as a flavour and nutrition enhancer into baked goods and cereals.
