Preparation:
Place one segment of the tea brick into a preheated teapot and pour in 400–600 ml of water at 80–90 °C. Let steep for 6–8 minutes. Honey or sugar may be added if desired. Multiple infusions are recommended.

Ivan-chai (fireweed) is not the tea plant Camellia sinensis, so it naturally contains no caffeine. Fermenting the leaf — a process in which the cell sap is oxidised by the plant's own enzymes — changes its chemical composition and flavour: the infusion becomes fuller, darker and more layered than that of an ordinary herbal blend, and in style it really does resemble dark tea. Yet there is no stimulating effect from caffeine.
The brick is convenient because it is easy to divide into portions: break off the amount you need and store the rest in a dry place away from strong odours. For one brew, use one segment of the brick per 400–600 ml of water in a pre-warmed teapot.
Since it contains no caffeine, the drink does not put the kind of strain on the nervous system that is typical of coffee or black tea. It is easy to include in your evening routine, serve after a meal instead of coffee or enjoy as a break during the working day — especially in the colder months, when you want something warm and full of character.
