Ivan-chai (fireweed) is not the tea plant Camellia sinensis, so it naturally contains no caffeine. Fermenting the leaf — a process in which the cell sap is oxidised by the plant's own enzymes — changes its chemical composition and flavour: the infusion becomes fuller, darker and more layered than that of an ordinary herbal blend, and in style it really does resemble dark tea. Yet there is no stimulating effect from caffeine.
In this product, fermented ivan-chai is complemented by ginger and lemon. Ginger adds spice and a sense of warmth, lemon a light citrus freshness. Ivan-chai flowers soften the overall bouquet. The result is a rich, warming drink, but without the stimulation you get from coffee or ordinary tea. This makes it a suitable option for an evening cup of tea or for those who limit their caffeine intake for whatever reason.
It is important to understand that, despite the absence of caffeine, ginger and citrus can cause individual reactions — if you are sensitive to these ingredients, start with a weaker brew.
