Siberia Without Borders Ivan Chai "Strength of Youth" (Sila Molodosti) is a premium organic Siberian herbal tea from the Siberia Without Borders / Siber Bez Granits range by IP Kongarova (Siberia), made with fermented fireweed leaves (Epilobium angustifolium, Ivan Chai). Ivan Chai is produced from the leaves of the willowherb (Epilobium angustifolium, fireweed or rosebay willowherb), one of the most characteristic and widely distributed flowering plants of Siberian meadows and forest clearings. The leaves are processed through the traditional multi-stage Koporye fermentation: fresh leaves are wilted, rolled to release cell enzymes and juice, allowed to oxidise (ferment) in controlled conditions, and finally slowly dried. This fermentation process develops the characteristic deep, earthy, honey-like, slightly woody flavour and amber colour of Ivan Chai, and simultaneously concentrates the bioactive compound profile — tannins, polyphenols (flavonoids: quercetin, kaempferol; tannins: ellagitannins), chlorogenic acid and beta-sitosterol.
