Lekraset Caraway (Carum carvi L.) 50g is a dried herbal supplement of 100% caraway fruit (seeds) from Carum carvi L. (family Apiaceae). Caraway is a biennial plant native to Western Asia, Europe and North Africa, and one of the most ancient and widely used culinary spices and traditional medicinal herbs in European herbal tradition. Caraway seeds have a characteristic warm, slightly anise-like, earthy and distinctively pleasant aroma and flavour, attributed to the principal aromatic compounds in the essential oil: carvone (42–65%) and limonene (20–40%), along with dihydrocarvone and other minor volatile compounds. To make an infusion, measure roughly 1–2 teaspoons of the whole dried fruits per 200–250 ml of water. Lightly crush them in a mortar or between two spoons first — this breaks the fruit walls and lets the essential oil (mainly carvone and limonene) escape into the water, giving a noticeably warmer, more aromatic cup.
Whole fruits behave differently from pre-ground powder. Their intact structure protects the essential oil, so flavour releases gradually during cooking or baking. For rye bread dough, many bakers lightly crush or coarsely grind the fruits just before mixing — this gives bursts of aroma in the crumb while keeping some texture. If you prefer even distribution, grind only what you need; pre-ground caraway loses its volatile oils within weeks.
Caraway (Carum carvi) is a member of the Apiaceae (umbellifer) family. People who react to celery, fennel, anise, coriander, dill, parsley, or carrot may also react to caraway because of shared allergenic proteins. If you have known sensitivities to any of these, start with a very small amount — a pinch in food or a weak infusion — and observe for any itching, swelling, or digestive discomfort.
