Fireweed — known as ivan-chai (Иван-чай) in Russia and "tulerohi" in Estonian — is a flowering herbaceous plant of the family Onagraceae, widespread across boreal forests, forest clearings and recently burned areas across Northern Europe, Siberia, Canada and other temperate-boreal regions. The leaves of fireweed have been fermented (processed in a manner analogous to the traditional fermentation of tea leaves) to develop a rich, complex, deep earthy-floral-honey flavour with characteristic warm, full-bodied character — quite distinct from the green, grassy taste of unfermented fireweed. Fireweed leaf tea has historically been known as "Koporye Tea" or "Russian Tea" — it was commercially cultivated and exported from the Koporye region near St. Petersburg in the 18th–19th centuries, prized across Europe before being eclipsed by Indian tea imports.
