Di&Di "Eat Healthy" 100% Cold-Pressed Amaranth Oil is produced by cold-pressing the seeds of the amaranth plant (Amaranthus cruentus or Amaranthus hypochondriacus), a remarkable grain plant originating from Central and South America with a nutritional profile that has attracted significant scientific and commercial interest. Amaranth seed oil is highly distinctive among edible plant oils due to its exceptionally high content of squalene — an unsaturated triterpene hydrocarbon that constitutes approximately 6–8% of total oil weight, a concentration some 10–20 times higher than in most other vegetable oils.

Squalene is a naturally occurring compound produced in all higher organisms as an intermediate in the biosynthesis of cholesterol and other sterols, and is present in large amounts in shark liver oil (from which it takes its name) and in relatively smaller amounts in most vegetable oils. In amaranth oil, it is found at levels far higher than in any other commonly available plant oil. In addition to squalene, amaranth oil contains a well-balanced fatty acid profile (oleic acid, linoleic acid, and palmitic acid), natural tocopherols (vitamin E), and tocotrienols.
