Allspice (Pimenta dioica) is an evergreen tree from the Myrtaceae family native to the Caribbean and Central America, whose dried berry provides one of the most complex spice aromas known — it contains eugenol (the same key aromatic compound as cloves), along with caryophyllene, methyleugenol and other terpenes, giving a combined aroma reminiscent of cloves, cinnamon and nutmeg simultaneously. Black pepper (Piper nigrum) provides the characteristic pungent heat from piperine and the aromatic depth of caryophyllene and beta-pinene. Liquorice root (Glycyrrhiza glabra) provides the distinctive sweet, aniseed-like taste from glycyrrhizin and its aglycone glycyrrhetinic acid. The combination creates an intensely aromatic, warming, slightly sweet-spicy blend with a distinctive depth of flavour. PREPARATION: Place 1 filter bag in a cup. Pour 200 ml of hot water at 90°C. Steep for 7–10 minutes.
