Teavit Jerusalem Artichoke Coffee is a caffeine-free coffee substitute beverage prepared from gently roasted Jerusalem artichoke (Helianthus tuberosus) tubers. Jerusalem artichoke, also known as earth pear or topinambur, is a sunflower-family plant native to North America and widely cultivated in Europe and Russia for its edible tubers. Jerusalem artichoke tubers are nutritionally distinctive due to their exceptionally high content of inulin — a prebiotic soluble dietary fibre in the form of a fructan polysaccharide — rather than starch, which is the predominant carbohydrate in most other root vegetables and potato. The gentle low-temperature roasting of the Jerusalem artichoke tuber preserves the nutritional content of the fresh tuber while developing a pleasant, mild, coffee-like roasted aroma and flavour profile.
