The drink is based on chicory, not coffee beans. When roasted, chicory gives a rich, slightly bitter taste that many perceive as ‘coffee-like’, yet it contains no caffeine and has no stimulating effect on the nervous system.
Since the drink contains no caffeine, it does not affect falling asleep and puts no strain on the nervous system; this is its main practical difference from coffee in terms of when you drink it.
The honest answer: the taste is similar to coffee but not identical. Chicory gives a roasted, slightly bitter profile, which is why it has long been used as a coffee alternative. However, cedar extract, chaga and red root add noticeable natural notes: coniferous, woody, herbal. The resulting taste is milder and more delicate than espresso, without coffee's characteristic acidity and bitterness.
