Milk thistle seed oil is distinctively characterised by its exceptionally high content of silymarin — a complex of closely related flavonolignan compounds including silybin, silydianin, and silychristin — which constitute the principal bioactive fraction of the seed and are found in no other commonly available edible oil at comparable concentrations.
In addition to silymarin flavonolignans, milk thistle seed oil provides a rich fatty acid profile dominated by linoleic acid (omega-6, approx. 50–60%), oleic acid (omega-9), and palmitic acid, together with natural tocopherols (vitamin E) as the oil's primary antioxidant stabiliser. The cold-pressed, unrefined production process preserves the full natural content of flavonolignans and tocopherols that would be partially lost in refined oil production. Milk thistle oil has a pleasant, mild, slightly nutty flavour and a characteristic greenish-golden colour from the silymarin and chlorophyll content. It is used cold — on salads, in dressings, or taken directly — to preserve its heat-sensitive nutritional qualities.
