Germination activates enzymes in the grain that increase the bioavailability of vitamins, minerals and amino acids while neutralising some of the enzyme inhibitors naturally present in raw legumes, making sprouted lentils gentler on digestion than unsprouted ones. The whole grain is used without polishing, so all naturally occurring nutrients in the grain, bran and germ remain intact.
