Emeljanovskaja Biofabrika Pine Cone Jam with Ginger is an artisan food confection from the Emeljanovskaja Biofabrika range, produced from young green pine cones (Pinus sylvestris) harvested from the ecologically pristine forests of the Novgorod region of Russia. Pine cone jam is a centuries-old traditional confection of the Northern Russian culinary heritage; young pine cones are harvested in late spring before the lignin hardens, when they are still soft, fragrant and rich in pine resin compounds and natural terpenes. The Novgorod forest wild-harvested young cones are slow-cooked with natural ingredients to produce a rich, deep amber-coloured jam with a characteristic bittersweet resinous pine flavour. Ginger (Zingiber officinale) root adds a pleasantly refreshing warming spice note that complements the pine resin taste. The jam is produced using only natural ingredients and is free from artificial preservatives, colours or flavours.
