Sprouted Wheat Flakes are produced from whole wheat grains (Triticum aestivum) that have been germinated before being rolled into flakes. Unlike conventional wheat flakes, which are produced from ungerminated grain, these flakes undergo a germination step before processing. During germination, the grain activates its own natural enzymes, partially breaking down starches and proteins into more easily digestible forms, reducing the level of phytic acid (which can bind minerals and reduce their bioavailability), and developing a more complex, slightly sweet flavour profile characteristic of sprouted grains.
The flaked format means no cooking is required: the flakes can be eaten directly after a brief soak in liquid, or added to smoothies, granola mixes, and raw-food preparations. Sprouted wheat is a source of B vitamins — particularly thiamine (B1), riboflavin (B2), and folate — as well as dietary fibre, magnesium, iron, and zinc.
