What’s the difference between unrefined cocoa butter and the refined version, and why does it matter for this oil?

Unrefined cocoa butter is pressed from cocoa beans without further chemical processing or deodorization, preserving its full profile of natural fatty acids, antioxidants, and its characteristic cocoa aroma.
