Astaxanthin (3,3′-dihydroxy-β,β-carotene-4,4′-dione) is a naturally occurring xanthophyll carotenoid pigment and powerful antioxidant found in microalgae — primarily in Haematococcus pluvialis, a freshwater microalga that accumulates astaxanthin under stress conditions as a photoprotective pigment — and in the marine organisms that feed on it, including wild salmon, trout, shrimp, krill and flamingos, to which it imparts the characteristic red-pink colouration. Astaxanthin belongs to the carotenoid family, structurally related to beta-carotene, lutein and zeaxanthin, but unique in having both polar hydroxyl and keto groups on each end of the polyene chain, which allows it to span the full thickness of a cell membrane bilayer from the inner to the outer surface.
