The dried root of the liquorice plant contains a characteristic and complex phytochemical composition: glycyrrhizin (glycyrrhizinic acid and its salts, 6–12%) — the principal sweet, active compound responsible for licorice's distinctive intensely sweet taste (approximately 50 times sweeter than sucrose) — together with flavonoid glycosides (liquiritin, liquiritigenin, liquiritoside), isoflavonoids, coumarins, polysaccharides, sterols and essential oils.
