Lecithin is a mixture of phospholipids, principally phosphatidylcholine (PC), phosphatidylethanolamine (PE), phosphatidylinositol (PI) and phosphatidic acid, with naturally occurring traces of phytosterols and fatty acids. Phosphatidylcholine is the most abundant phospholipid in biological cell membranes and is the primary dietary precursor for choline, an essential nutrient (classified as a B-vitamin group compound) required for the synthesis of acetylcholine (a neurotransmitter) and for cell membrane structural integrity.
