The powder is hygroscopic, meaning it absorbs ambient humidity and can turn into hard lumps if left exposed. After each use, press the air out of the bag, seal it with the original zip-lock or a clip, and store it in a cool, dry cupboard away from the stove, dishwasher, or sink. If you live in a humid climate, transfer a portion to a small airtight jar for daily use and keep the bulk pack sealed until refill. A food-grade silica gel packet (the kind found in supplement bottles) placed inside the jar helps maintain flowability. Should clumps form, they are harmless — break them up with a fork or pulse briefly in a clean spice grinder. Avoid refrigeration; the temperature swings when opening the door introduce condensation.
