The forest berry character usually comes from a mix of ingredients such as bilberry, lingonberry, blackcurrant, rosehip and hibiscus, combined with mild herbal notes. These plants are valued in Nordic and Baltic tradition for their tart, slightly sweet flavour and naturally occurring plant pigments called anthocyanins and flavonoids — the same compounds that give berries their deep red and purple colour. Rosehip additionally contributes a gentle citrus tone and a natural source of vitamin C, while hibiscus adds a clean, ruby-coloured acidity.
