What should I know about natural variation and storage?

As a raw, single-ingredient herb, each batch of rosehip fruits reflects the growing season — colour may range from orange-red to deeper burgundy, and tartness can shift from mildly tangy to quite sharp. This is normal for whole dried fruit and not a quality defect. To keep the fruits at their best, transfer them from the original pouch into an airtight glass or metal container and store in a cool, dark cupboard (not above the stove or near a window). Moisture is the main enemy: if the fruits absorb humidity they can clump, develop off-flavours, or eventually mould. Properly stored, they remain usable for 12–18 months, though the vitamin C content naturally declines over time. If you notice any musty smell, visible mould, or insect presence, discard the batch.
