This blend is made from fermented fireweed leaves (ivan chai) with added aronia, and the fermentation step is what shapes the taste most. Raw fireweed leaves have a grassy character, but after fermentation they develop a mellower, fuller, and rounder cup that is generally easier to drink regularly than sharper herbal infusions. Tannins in the leaves give the infusion some structure and a slightly dry finish, while natural mucilage makes the mouthfeel smoother rather than thin or watery.
Aronia adds a deeper berry note and a richer character, along with the deep purple pigments (anthocyanins) that come from the berries. The result is a caffeine-free herbal drink with more body than many plain herbal teas, but still lighter than black tea. If you are used to black tea, this can work as an alternative when you want a warming drink later in the day without caffeine, though the taste is fruitier and earthier rather than brisk or malty. Because it contains no tea plant (Camellia sinensis), it will not have the astringent bite or stimulating effect of ordinary black or green tea.
