As a result, the oil retains fatty acids and aromatic plant substances, including thymoquinone, one of the best-known components of kalonji (Nigella sativa) seed. These compounds are part of the seed's original plant matrix rather than something added later. In practice, this gives the oil a fuller aroma and a more complex character than a heavily processed oil. It also means a light sediment may appear in the bottle, which is normal for this type of product. If you are used to neutral, highly refined cooking oils, this one behaves differently — it is a minimally processed food oil, not a neutral frying oil.
