Which dishes is apricot kernel oil best added to, and does it make sense to fry with it?

This oil has a mild nutty note that complements dishes well where the main ingredients should not be overpowered. The manufacturer lists the following culinary uses: salads, porridges, desserts, baking and sauces.

In practice this means it is best to add the oil after cooking, to dishes that are not heat-treated or where heating is moderate:

  • drizzle it over warm porridge or roasted vegetables once they are on the plate;
  • use it as the base for a light salad dressing with lemon juice or vinegar;
  • add it to dough for baking or to a dessert cream, where heating is moderate.

Frying with unrefined cold-pressed oil is not recommended: at high temperatures such oils quickly reach their smoke point, lose their aroma and can form undesirable compounds. For frying, it is better to choose refined oils with a high smoke point.

The oil is a source of fat in the diet and contains vitamin E, carotenoids and lycopene — substances with antioxidant properties. Nevertheless, it does not replace a balanced diet and is not intended to treat or prevent any condition. If you are unsure how to include new oils in your diet, it is worth consulting a specialist.
