Cold-pressed linseed oil contains a large amount of polyunsaturated fatty acids, above all alpha-linolenic acid (the plant form of omega-3). These very acids make the oil valuable in the diet, but they also make it sensitive to high temperature: when heated, the structure of the fatty acids changes and the product loses its characteristics.
For this reason linseed oil isn't used for frying, baking or boiling. It is added after the dish is cooked — to salads, porridges, ready vegetables, cottage cheese. It's acceptable to add the oil to a slightly warm dish, but not to a hot one straight from the stove: according to the label, heating the oil above 50 °C isn't recommended.
If you want to include linseed oil in your diet, it's easiest to measure it in small portions and dress food with it right before serving. This preserves both the taste — characteristic, slightly tart, with nutty notes — and the composition of the product.
