Pumpkin seed flour does not fully replace wheat flour. Because it contains no gluten, dough is less elastic and holds its shape less well when it is used as a complete replacement. This is not a flaw in the product but a natural characteristic; you simply need to take it into account when cooking.
In practice, partial substitution works best: the manufacturer recommends mixing pumpkin seed flour with wheat flour in equal proportions; it is also combined with rice, oat or coconut flour. This approach gives an interesting texture and a light nutty flavour without sacrificing the structure of the bake.
It works well for pancakes, biscuits, flatbreads, muffins and cake layers. In these formats the absence of gluten is less critical than, for example, in yeast bread, where the elasticity of the dough is essential.
If you are using this product for the first time, start with a small proportion in a familiar recipe: this makes it easier to judge how the taste and consistency of the finished dish change, and to adjust the proportions if necessary.
