Pumpkin seed oil belongs to the oils traditionally used cold. When heated, its flavour qualities — a rich, nutty aroma and dense character — noticeably weaken, so it is not suitable for frying or roasting.
The best way to use it is to add the oil to a dish that is already cooked or cooled:
dress a salad of fresh or boiled vegetables;
drizzle over roasted vegetables just before serving;
mix with lemon juice or vinegar for a homemade dressing;
add to porridge or a puréed soup on the plate, not in the pot.
It is precisely in cold and warm (but not hot) dishes that the oil's flavour comes through most fully. It is used in small amounts — as a finishing touch rather than a base for cooking. For frying it is better to choose a refined oil with a high smoke point, and to add pumpkin seed oil to the finished dish for flavour.
