To make an infusion from dried immortelle flower heads, take the amount of herb stated on the packaging and pour 1 glass (200 ml) of boiling water over it. Steep for 10–15 minutes under a lid or saucer so that the volatile compounds do not escape.
Strain the finished infusion. Immortelle has a distinctive character: a pale golden colour, light astringency and a dry herbal note with a barely perceptible spiciness. If the astringency seems too strong, simply reduce the amount of herb or the steeping time — the strength is easy to adjust yourself, which is one of the advantages of whole herbal material over ready-made tea bags.
Immortelle goes well with other herbs: mint, lemon balm, chamomile, thyme or citrus peel. Such combinations soften its distinctive taste and create a more layered drink. You can mix them directly in the teapot, adjusting the proportions to taste.
Store the dried flower heads in a closed container, away from moisture, direct light and strong odours — this helps preserve the aroma of the herb throughout the shelf life stated on the packaging.
