How should this porridge be prepared?

When flaxseed comes into contact with hot water, it swells and forms a thick, viscous mass — this is its natural property. That is why it is important to get the ratio of water to powder right: start with the recommendations on the packaging and then adjust to your taste. If you want a thinner porridge, add a little more water; if you prefer a thicker texture, a little less.

Pour the amount of hot water stated on the packaging over the powder, stir and leave to stand for a short while: during this time the mixture will thicken. Do not leave it uncovered for long — the porridge cools quickly.

This porridge has a savoury, vegetable flavour. You can build on it: add a pinch of salt, a spoonful of yoghurt for creaminess, seeds (pumpkin, sunflower) for texture or some fresh herbs. If you want to make the dish more filling, top it with a boiled egg or a piece of avocado.

At the office or on the go, the porridge is easy to make right in a thermal mug or a container with a lid: pour, close, wait — and it is ready.
