Linseed oil is one of the oils with a high content of polyunsaturated fatty acids, which are particularly prone to oxidation. Under the influence of oxygen, light and heat the oil goes rancid faster than, for example, olive or sunflower oil.
Storage conditions are stated on the manufacturer's packaging; as a rule, after opening, linseed oil is closed tightly and kept in the fridge, away from sources of light. Don't leave the oil open for long and don't keep it near the stove or on a windowsill. If the oil has acquired a sharp, unpleasant smell or a bitter aftertaste that differs from the usual light tartness — it's a sign of oxidation and it shouldn't be used.
A 500 ml bottle is used up faster if you add the oil in small portions to daily dishes — this reduces the risk of spoilage after opening. Keep an eye on the expiry date stated on the packaging.
