Cold-pressed sesame oil should be kept in a cool, dark place — a kitchen cupboard away from the stove or a pantry shelf works well. Always close the cap tightly after each use to minimize contact with air, which accelerates oxidation. Avoid storing the bottle near heat sources, in direct sunlight or in warm, humid spots, as these conditions shorten the oil's shelf life and can cause off-flavours to develop.

One of sesame oil's advantages is its natural stability: the lignans (sesamin and sesamolin) and tocopherols present in the oil act as built-in antioxidants, so unrefined sesame oil resists rancidity better than many other cold-pressed oils such as flax or walnut. Once opened, it typically stays fresh for several months if stored correctly — check the label for the producer's recommended use-by period after opening, usually around 3–6 months.

You will know the oil has gone off if it develops a sharp, unpleasant smell or a bitter, stale taste. If that happens, discard it. Refrigeration is not necessary and can cause the oil to thicken or become cloudy (it will clear again at room temperature), but some people choose to refrigerate opened bottles in hot climates to extend freshness further.
