Pour the water over the leaves and let it steep, covered, for 5 to 8 minutes. The fermented leaves need this time to fully unfurl and release their deeper aromas. You can taste it after 5 minutes and steep longer if you prefer a stronger infusion. It can be enjoyed plain, or with a touch of honey if you like sweetness. The leaves can often be steeped a second time with good results, using slightly hotter water and a longer steep. Store the unused leaves in a sealed container away from light, moisture, and strong odors to preserve their fragrance.
