SEMU sea buckthorn jam works well in several completely different contexts — and behaves differently in each of them.

Breakfast. A spoonful of jam in warm porridge adds a berry tartness that livens up its neutral taste. With pancakes and fritters it replaces classic jam without overpowering the batter — the sweet-and-sour balance of sea buckthorn is gentler than that of, say, blackcurrant jam. In yoghurt or cottage cheese the jam mixes in evenly and gives the dairy base a rich fruitiness without excess sweetness.

Cheese board. This is perhaps the least obvious use, but an interesting one. A sweet-and-sour jam next to hard or goat's cheeses creates a contrast that is common in European gastronomy: a slightly salty, dense cheese and a bright berry tartness complement each other. A small amount is enough — about a teaspoon per serving.

Desserts. The jam's thick consistency means it can be used as a filling or topping: it does not run at room temperature, holds its shape well on a cheesecake or panna cotta and does not overpower delicate creamy flavours, but simply adds a berry accent to them.

A practical tip. If sea buckthorn on its own seems too sharp to you, the jam is a milder option: pectin and heat treatment round off the berry's acidity, making the taste less aggressive.
