Cedar nut oil has a distinctive flavour profile and is intended for cold dishes, salads and dressing ready-made dishes, not for frying or other heat treatment. When heated to high temperatures, oils like this lose their aroma and can form undesirable compounds.
The right way to use it is to add the oil to a dish that is already cooked: dress a salad, drizzle it over porridge or vegetables, stir it into quark or spread it on toast. A small amount is usually enough to give the dish a characteristic nutty note. That is why cedar nut oil tends to be a finishing touch rather than a cooking base.
If you are used to using one oil for both frying and dressing, it is worth keeping cedar nut oil separate — for cold dishes and ready-made food only. For frying, refined oils with a high smoke point are a better choice.
