How should this tea be brewed, and how long should it steep?

The tea comes in 1.5 g filter bags, so there is no need to measure out the leaves or use a teapot. According to the instructions: one bag per cup (about 200 ml) of water at 98 °C, steeped covered for 5–10 minutes.

The steeping time is worth adjusting to taste:

  • about 5 minutes gives a milder, more delicate infusion with less pronounced tannic notes;
  • 7–10 minutes gives a richer taste, and the feeling of body in the mouth becomes more noticeable thanks to the tannins naturally present in willowherb leaves.

Boiling water (100 °C) is acceptable but may make the taste harsher, especially with a long steeping time. If you are trying ivan-chai for the first time, it is easier to start with a short brewing time and adjust it to your preferences.

The finished infusion can be drunk hot or left to cool to a comfortable temperature. Honey, a slice of lemon or other familiar additions can be added if you like; they go well with the herbal taste of willowherb.

Once opened, the pack is best stored in a dry place away from other odours: filter bags easily absorb smells from their surroundings, which may affect the taste of the drink.
