Herbal teas with spices such as cardamom, cinnamon, ginger and clove release their flavour better with a longer brewing time than ordinary black tea. The optimal water temperature is around 90–100 °C, i.e. freshly boiled or slightly cooled.
The exact brewing time is stated on the pack, so follow it. During this time, the chamomile and linden flowers release their soft floral notes, and the spices have time to give the drink depth and warmth. Brew it for less time and the flavour will be lighter and more floral; brew it for longer and the spicy accent will be stronger.
Cover the cup while the tea is brewing: this helps retain the essential oils responsible for the aroma. After removing the tea bag, you can press it lightly with a spoon for a richer flavour.
The tea is good on its own, without any additions. If you like, you can add a little honey, which brings out the sweetish notes of fennel and cinnamon. Milk or cream go less well with this blend: they mute its subtle herbal nuances.
