The standard approach is to pour 200 ml of boiling water over 1 tablespoon of the dried herb and leave it to steep, covered, for 10–15 minutes. The longer it steeps, the richer and more astringent the taste, thanks to the tannins.
Wild thyme works well as a drink on its own, but it is also added to herbal blends: it goes well with mint, lemon balm and rosehip. In that case it usually makes up a third to a half of the blend, so that its spicy profile does not overpower the other herbs.
Strain the infusion before drinking. It can be drunk warm or allowed to cool — the taste is preserved. It is not recommended to keep the finished infusion for more than a few hours: the essential oils partly evaporate and the aroma becomes less pronounced.
To store the herb itself, choose a dry, dark place away from sources of heat and moisture — this helps preserve the essential oils and aroma throughout the shelf life stated on the pack.
