Fennel seeds contain essential oils, which are released better if you lightly crush or grind the seeds before brewing — for example, with a spoon or in a mortar. This step is optional, but it makes the drink more aromatic.

The standard method: pour boiling water over the seeds and leave to infuse, covered, for 10 minutes. The lid is important — it keeps the volatile essential oils in the cup; otherwise some of the aroma and active substances escape with the steam.

According to the label, use 1 teaspoon of seeds per 1 cup of boiling water. The drink is taken 3 times a day before meals.

After infusing, strain the drink. Adding sugar or honey is not prohibited, although fennel itself has a pleasant, slightly sweet and spicy taste and is easy to drink without sweeteners.

Store the seeds in a dry place, away from direct light and strong odours — essential oils are sensitive to storage conditions.
