How do you correctly prepare a decoction or infusion from liquorice root?

Liquorice root in the form of dried herbal material is used to prepare a decoction or infusion; this is how the water-soluble components are extracted from it: saponins (including glycyrrhizin) and flavonoids, for which the plant is used in herbal medicine.

According to the instructions on the pack, 10 g of the root is covered with 200 ml of hot water, heated in a tightly closed enamel pot for 15–20 minutes, then left to steep for 40 minutes and strained.

Heating and a long steeping time are important specifically for the root: dense root material releases water-soluble substances more slowly than leaves or flowers.

The finished infusion is taken 1 tablespoon 4–5 times a day for 10 days; it is not advisable to take it for longer without agreeing this with a specialist, as liquorice is not intended for long-term uncontrolled use.

The infusion is kept in the fridge in a tightly closed container and should not be made in advance to keep: water extracts from herbal material quickly lose their quality. The dried root itself should be kept in a dry place protected from light.
