How should cedar nut oil be stored after opening?

Unrefined vegetable oils, including cedar nut oil, are sensitive to light, heat and contact with air; under their influence the oil oxidises and develops a rancid taste. After opening, the bottle must be tightly closed and stored in a dark, cool place: the fridge or a kitchen cupboard away from the cooker is best.

The 100 ml volume is designed for a relatively short period of use, which is convenient: the oil does not have time to sit around. Nevertheless, you should go by the best-before date on the pack and try to use the product within a few weeks of opening.

A few practical details: do not leave the oil open for long, do not pour it into metal containers and avoid direct sunlight. If the oil has developed a sharp or bitterish smell that differs from its usual nutty aroma, this is a sign of oxidation, and it should not be eaten. Fresh cedar nut oil has a mild, distinct nutty smell with no off-notes.
