Liquorice is used in this syrup neither as a flavouring nor as a sugar substitute. Its root contains glycyrrhizic acid — a substance that affects the consistency of phlegm: it makes it less viscous and easier to cough up. This is why syrups with liquorice are more often chosen for a cough when the phlegm feels thick or is hard to clear.
