How do I brew it properly to get the taste I want?

As a loose-leaf herbal tea, it offers good control over the final brew. Start with about one heaped teaspoon (roughly 2 grams) of leaves per 200–250 ml of freshly boiled water, poured directly over the leaves in a teapot, cup with an infuser, or French press.

The most important variable is steeping time, which directly affects strength and flavour notes. For a lighter, more delicate cup that highlights grassy and fresh herbal notes, steep for 3–4 minutes. For a deeper, richer infusion with a fuller body and more pronounced rounded mouthfeel from the plant's tannins, allow 5–7 minutes or even longer. You can experiment with the amount of leaf as well; using slightly more leaf with a shorter steep can create intensity without as much astringency.

Unlike many true teas, Ivan tea does not typically become unpleasantly bitter with longer steeping, making it quite forgiving. After brewing, the leaves can often be re-steeped 1–2 times, with each subsequent infusion potentially revealing slightly different subtle notes. It's generally enjoyed without milk or sugar to appreciate its natural herbal profile.
